This is my go to dish when I don't have a lot of time or energy. It is really a comfort meal due to the addition of the cream, but you don't feel so bad eating it as it has both tomatoes and peas....so I guess vegetables trump the cream? Also feel free to swap the pasta for another like orzo. This is a great dish for kids too.....also something I guess since currently there are no kids in my house! Anyway enjoy!
Cook shallots and garlic chunks in olive oil
Add a small can of diced tomato, you can use 3/4 of the can if you don't like a saucy pasta
After the tomato cooks down add your peas (frozen organic work well) and cream
Then add your cooked pasta to the tomato cream sauce, pasta should have flavor as you for sure salted the water!
I grate up the parmigiano cheese into the whole dish before serving....a lot of it....meaning if you think it is too much keep going!
